Cut Brussels sprouts in half then carefully use a mandolin slicer to thinly shave them. You can saute them in Olive oil and season or drizzle on a homemade balsamic vinaigrette for a salad with cranberries, walnut and slice pear for sweetness
Bake your sweet potatoes
