It's your Lucky Day have some Greens

 Green Day











 There’s no reason to skip your greens today, in honor of Saint Patricks day we are doing 3 healthy and easy to make salads with a base of the super green KALE we will use it as a base for all 3 salads .

Getting the kale ready (7 minutes)
take stems out and shred about 8 oz kale. In a large bowl combine 2 Tbsp of lemon juice, 2 Tbsp EVOO
 ( extra virgin olive oil), pinch of salt and pepper, mix it all together and use as a base for the below salads


Kale with parmesan, celery and almond (kale base)

  • 4 celery stalks
  • 4 Tbsp of parmesan cheese reserve the
  • ½ cup of chopped roasted almonds
  • ½ to drizzle over salad

Combine all ingredients with the kale base and drizzle cheese over salad.


Kale with avocado with oranges and nuts (kale base)

  • 1 Avocado pitted chopped 
  • 2 oranges peeled and sliced
  • 1 pink grapefruit
  • ½ cup of pine nuts

Combine all ingredients with the kale base.


Kale with cucumbers, tomatoes and feta cheese

  • 1 seedless cucumber chopped
  • 1 cup of cherry tomatoes cut in half
  • 1 cup of feta cheese

Combine all ingredients with the kale base and top off with crumble feta cheese
